Sweetcorn and Mozzarella Toast
Ingredients:
- 8-10 bread slices or French bread stick cut into ½ inch rounds
- Butter or Margarine to spread on bread
- For the filling
- 1 tbsp butter
- 1 medium onion-finely chopped
- 2 green chillies-finely chopped
- ½ cup mixed peppers-cut into small pieces
- 1 cup sweet corn-cooked
- 1 tbsp corn flour
- ¼ cup milk
- ½ tsp mixed herbs
- Salt and freshly ground pepper to taste
- Few mozzarella cheese slices or grated mozzarella
- Chilli sauce/Tomato ketchup to serve
Recipe:
Remove the crust from the bread slice and spread little butter on both sides.
If using French stick, spread butter on both sides.
Bake in hot oven (gas mark 6 or 180° C) for 5-10 minutes, until lightly crisp.
Meanwhile,
prepare the filling-heat the butter and add onion and green chillies
and cook for 2-3 minutes, making sure not to brown the onions.
Add mixed peppers and corn and cook further for 4-5 minutes.
Add corn flour, milk, mixed herbs salt and pepper and cook again for 2-3 minutes.
Switch off the gas and cool the mixture.
Spread this mixture on the toasted bread, sprinkle cheese on top and bake in the hot oven, until cheese melts.
Dot chilli sauce on top and serve hot.
